I am still in the middle of the latest gym weight loss challenge. We have our weekly weigh-ins on Mondays. And if that wasn’t bad enough the next one is tomorrow (AKA the Monday after Easter weekend..). Its safe to say this weekend has been filled with a lot of delicious food and drinks.. maybe more than it should be considering I’m in the middle of challenge at the gym. Oops?
So now we are in crunch time. I have one day to make up the past few indulgent days. I want to stick to high protein and low sugar and carbs today. In the name of protein I decided to give protein pancakes a try.
Full disclosure – I’m super sick of vanilla protein powder. Like a lot sick of it. So I was semi expecting to hate these. But I was pleasantly surprised. I actually said “wow” out loud when I tried them. They are so delicious. They taste similar to french toast. I liked them so much I decided I better share the recipe! So here goes!
- 2 scoops vanilla protein powder
- 1 ripe banana
- 1/2 tsp baking powder
- 1 tsp cinnamon – more if you really like cinnamon
- 2 eggs
Whisk all the ingredients together well, pour in a hot greased pan, and voila! There you have it. Delicious and super healthy/high protein protein pancakes!
Top with a little fruit for extra flavour!
