In light of the new year I have challenged myself to step up my meal prep game another notch. This means finding new food to prepare to keep things exciting and prevent me from falling into a boring meal plan rut. We all know breakfast is the most important meal of the day so I set my eyes on breakfast first and did what any millennial does when looking for a new recipe.. headed straight to Pinterest! Of course I was flooded with hundreds of ideas but the one that stuck out the most was overnight oats.
Overnight oats can be prepared in so many different flavours that its hard to get boring. So I gave it a try and I was not bored at all.
The first recipe I tried was healthy (and delicious!) chocolate banana overnight oats. It was amazing, and I mean AMAZING! I prepared 5 small mason jars of oats to keep me satisfied for breakfasts all week long. Now I am sharing this amazing recipe with you. Enjoy!
- ⅓ cup plain Greek yogurt
- ½ cup rolled oats
- ⅔ cup almond milk
- 1 tablespoon chia seeds
- ½ teaspoon vanilla extract
- 1 ripe banana mashed
- 2 tablespoons of semi sweet small chocolate chips
Whisk the ingredients together and set in the fridge overnight!
